A clearer starting point

Before we meet

Complete a short questionnaire and share selected documents so the conversation focuses on your venue and your main concern.

During your consultation

Use the 45-minute remote session to discuss how the business operates, where you feel pressure and which questions need investigating.

What you receive

A written summary of three initial priorities and a recommendation on whether a deeper review would be useful. This is an initial diagnostic, rather than a detailed costing exercise.

A practical plan for your venue

See what drives your margin

Review the agreed sales mix, purchasing and labour-cost information for one trading period of up to 12 weeks. We identify patterns, gaps and questions that deserve attention.

Understand selected menu items

For up to 10 agreed products, compare selling prices with available recipe and ingredient costs. Missing portion sizes, yields or supplier prices are flagged before conclusions are drawn.

Know what to tackle first

Receive a prioritised action plan showing the issue, supporting information, proposed action, responsible person, timing and indicator to follow. Any estimated financial effect is explained with its assumptions.

Discuss your next decisions

A 60-minute remote findings consultation helps you understand the recommendations and choose your next steps. Examples might include testing a price change or investigating purchasing differences, depending on what the review finds.

From findings to first steps

Start with the audit

Receive the Profitability Audit within the scope described above, including its findings consultation and prioritised action plan.

Work through your first actions

Use an additional 60-minute remote working session to turn selected recommendations into practical steps. Depending on your findings, this could mean discussing a price adjustment or organising how your team will track an action.

Create a simple view of progress

Set up a tracker for up to five agreed KPIs using your existing information. Measures are selected around the decisions you need to make, rather than adding reporting for its own sake.

Review your progress

A 30-minute remote review within 30 days of the findings consultation checks what your team has put into practice, what is still blocked and what to prioritise next. Your team remains responsible for implementation.

From reliable inputs to informed action.

  1. 1

    Understand

We clarify your decision, venue and goals, then check which records are available before confirming scope.

  2. 2

    Analyse

We review the agreed sales, purchasing, cost and labour records, identifying gaps and stating our assumptions.

  3. 3

    Recommend

You receive priorities with estimated impact, effort, an action owner and a way to measure progress.

  4. 4

    Improve

Your team implements the plan. Follow-up and implementation support are included only where agreed in your package.

WHAT YOUR PLAN LOOKS LIKE

Advice you can put to work.

Illustrative format only. This is not a client case study or a promise of savings. Your findings depend on your venue and the quality of the available data.

01 / FINDING

Understand the issue

For example, compare a popular dish’s selling price with its current recipe cost. Flag missing yields, portion sizes and supplier prices before drawing a conclusion.

02 / ACTION

Make a clear decision

Assess pricing, portioning or recipe options. Record the expected margin effect, implementation cost, responsible person and potential impact on guests.

03 / FOLLOW-UP

Check what changed

Track contribution per item and quantities sold against the baseline. Separate potential savings from realised results and avoid counting the same benefit twice.

Profit and cash flow are reviewed as different questions. Better margins do not automatically resolve debt repayments, stock purchases or upcoming bills.

Questions

Frequently asked questions

Who is this best suited to?

Our initial focus is independent restaurants, cafés and bars in Sydney, particularly owner-operated venues. Hotel food & beverage and multi-site projects are scoped individually to match the work required.

Do I need to buy Discovery first?

No. We discuss your needs and available records first. You can start directly with the Profitability Audit when it is the appropriate fit.

What information will you need?

Depending on scope: sales exports, supplier invoices, menu prices, recipes and portion costs, labour summaries and selected management reports. The quote specifies the period and records required. Please do not send payroll or financial files through the initial enquiry form.

What if my records are incomplete?

We explain which conclusions are possible and which are not. Data reconstruction or a separate preparation phase is quoted before work starts. Delivery timing is agreed once the required inputs are available.

Are visits and follow-up included?

Discovery is remote. Other packages use the remote sessions listed above; on-site visits and travel are agreed separately. The one-off package includes its stated progress review. Monthly support has a three-month minimum and a defined meeting schedule.

Can you guarantee savings?

No. Estimates depend on data quality, trading conditions and implementation. We state assumptions and agree indicators so that potential improvements can be compared with actual results.

Are websites and multimedia included?

They are optional, separately scoped services. They are recommended when they address an identified need, rather than automatically bundled into every advisory package.

Do you provide tax, legal or payroll compliance advice?

Our work focuses on operational and management decisions. Tax, BAS, legal advice and payroll compliance certification are outside the standard advisory scope. Where needed, the appropriate qualified adviser should review those matters.

How are scope and confidential information handled?

Before starting, we agree deliverables, fees, applicable GST, timing, access to records and confidentiality arrangements in writing. Only the information needed for the agreed work should be shared, through an agreed channel.
